Grilled Jerk-Rubbed Snapper Recipe
Grilled Jerk-Rubbed Snapper Ingredients: 4 yellowtail snappers, scaled, trimmed and cleaned 1 bunch thyme 1 bunch parsley 2 cloves 4 spring onions 1/4 cup olive oil 1/4 cup white wine vinegar 1 tablespoon lime juice Pinch cinnamon 1 Scotch bonnet pepper 4 cloves garlic 2 inches fresh ginger, peeled Method: To make the marinade put all of the ingredients into a blender, except for the snappers and blend until smooth. Coat each snapper with 1/4 cup jerk marinade. Place on a hot, clean grill and cook for 8 to 10 minutes on each side. Serve with Avocado Salsa.
